Paleo Banana Bread

It takes two ingredients to make this Paleo Banana Bread from good to great! Use our International Collection Coconut Oil and Coconut Flour and let yourself be transported into a delightful texture. Your mid morning snacks or pre-workout energy treats will never be the same.

2 tablespoons International Collection Organic Coconut Oil, melted
4 eggs
3 tablespoons honey
1 cup coconut flour
1 teaspoon baking soda
½ teaspoon sea salt
3 large ripe bananas


1. Preheat oven to 350°F and grease the inside of a loaf pan approx. 9″x5″ then line with parchment paper.

2. Put the International Collection Organic Coconut Oil, eggs and honey in a bowl and beat with a mixer on high until well combined.

3. In a separate bowl, stir together the coconut flour, baking soda and sea salt, then pour in with the wet ingredients and beat again on high.

4. Break up the bananas into the mixer with the other ingredients and beat on medium until well combined.

5. Pour the mixture into your tin, the mix will look wetter than most cake/bread mixes.

6. Bake for approx. 50 minutes. You can check by inserting a toothpick into the bread. When it comes out clean then it’s time to remove it from the oven.

7. I found I had to keep checking the cake after about 40 mins as the top was brown but the middle wasn’t quite ready. If this happens in your oven, put a piece of foil over the top of the tin.
