Greek Style Salad with an Apple Cider Vinegar Dressing
Apple Cider Vinegar has many health benefits, its rich in enzymes which help you to absorb more nutrients from food and it’s great for your skin.
Because of this we try to find ways to get this wonder ingredient into our diets as often as possible. The vinegar is an excellent addition to a dressing with the acidic nature of it helps to accentuate the flavor of the salad.
We made this last week and poured the dressing over a simple Greek salad – a summer staple in our house.
This salad is an American version of a traditional Greek dish; the lettuce is omitted from the original version.
Method
Chop all the vegetables and place into a large bowl, crumble the feta and add to the bowl.
In a small dish add all the ingredients for the dressing. Whisk with a fork until all the ingredients are well combined.
Pour the dressing over the salad and gently stir ensuring it coats all the vegetables. You may find that you do not want to use all the dressing, if not it will keep for a number of days though you may need to re-whisk to mix the ingredients.
Ingredients
Dressing:
- ¼ cup International Collection Oils Organic Apple Cider Vinegar
- ½ cup International Collection Extra Virgin Olive Oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
Salad:
- 1 head lettuce – Romaine or similar
- 1 cup of arugula
- 4 large tomatoes, chopped
- 1 English cucumber, chopped
- 1 medium red onion, cut into thin rings
- ¾ cup green olives
- 6oz crumbled feta cheese
