Ingredients

  • 2 tablespoons International Collection Walnut Oil
  • Pie Crust: Use your favorite pie crust or a pre-made crust for a 9-inch pie.
  • 1 cup light corn syrup
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/4 cups chopped pecans
  • 1/4 cup whole pecans
  • 2 apples, peeled, cored, and finely chopped

Method

  1. Preheat oven to 350°F (175°C). Prepare the crust: Press the pie crust into a 9-inch pie pan and crimp the edges if desired. Set aside.
  2. Make the filling: In a large bowl, whisk together the corn syrup, granulated sugar, brown sugar, eggs, walnut oil, vanilla extract, cinnamon, and salt until smooth and fully combined.
  3. Add the pecans and apples: Fold in the chopped pecans and finely chopped apples, mixing until evenly distributed.
  4. Assemble the pie: Pour the filling into the prepared pie crust.
  5. Bake: Place the pie on a baking sheet and bake for 55–60 minutes, or until the center is just set and a knife inserted comes out clean. If the crust starts to brown too quickly, cover the edges with foil.
  6. Cool and serve: Let the pie cool completely on a wire rack. Serve with whipped cream or a scoop of vanilla ice cream if desired!
