Pea, Mint and Feta Salad

  1. Place the peas into a large serving bowl to defrost.
  2. Dice the onion into small pieces, cut the feta into chunks and finely chop the mint. Add these to the bowl with the International Collection Virgin Avocado Oil, salt and pepper. Stir the ingredients until they are evenly combined.
  3. If you have some left over this will keep in the fridge for a couple of days.
