Caribbean Oxtail Stew

Ingredients

  • 2 tablespoons of International Collection Grapeseed oil
  • 2 lbs of oxtail
  • 2 tablespoons of onion and garlic purée
  • 1.5 tablespoons of green seasoning purée (green
  • pepper, garlic, onion, thyme, green onion)
  • 2 tablespoons of gravy browning
  • 2 tablespoons of ketchup
  • 2 tablespoons of soy sauce
  • 3 tablespoons of oxtail or all purpose seasoning
  • 2 carrots chopped
  • 1/2 bell pepper (1/4 yellow, 1/4 red)
  • 1 tsp of all spice
  • 1 sprig of thyme
  • 1 tablespoons of pimento seeds
  • 1 can of Butter Beans
  • Add hot water accordingly to stew

Method

  1. For oxtail stew – Clean and prepare oxtail by trimming excess fat and soaking in hot water with vinegar for 15 mins, then drain water
  2. Season oxtail with onion and garlic purée, green seasoning, gravy browning, ketchup, soy sauce and 3 tablespoons of oxtail/all purpose seasoning
  3. Mix oxtail and seasonings then marinate (marinate for 24 hrs for best
  4. results)
  5. Add International Collection Grapeseed oil to pan and sear both sides of each oxtail piece.
  6. Then add all oxtail pieces to the pot with 2 cups of water.
  7. Let simmer for 1 hour. After 1 hour, check the tenderness of the meat. Simmer for another 30 mins, then add in carrots, all spice and thyme. Add in more water as needed (taste, and add more oxtail seasoning if needed). 
  8. Once meat is tender, simmer for 20 additional minutes and add in butter beans.
  9. Serve with rice and peas and enjoy!
