Spicy Vodka Pumpkin Pasta

It’s pumpkin season and our Pumpkin Seed Oil is just what you need for a creamy, spicy, nutty Spicy Pumpkin Vodka Pasta!

  1. Dice shallot and garlic cloves. 
  2. Preheat Macadamia oil on medium heat, add shallot and garlic and cook until softened, stirring frequently 
  3. Add in the tomato paste, pumpkin puree and vodka. De glaze the pan and mix everything with spatula. 
  4. Stir in the whole milk and cook for 5-7 minutes until the sauce slightly thickens. Season with salt. 
  5. Cook pasta according to instructions. Mix in pumpkin puree 
  6. Serve with Pumpkin seed oil and Parmesan cheese
