Pea, Mint and Feta Salad

This bright, vibrant salad is delicious and makes a perfect accompaniment with lamb, beef or chicken. We make this dish when we are having a BBQ or summer party. Look at other salad recipes on the blog if you want a number of different dishes to combine for an extra special party.

You can use fresh sweet peas with this dish but we tend to use frozen peas as a more affordable option.


Place the peas into a large serving bowl to defrost.

Dice the onion into small pieces, cut the feta into chunks and finely chop the mint. Add these to the bowl with the Avocado oil, salt and pepper. Stir the ingredients until they are evenly combined.

If you have some left over this will keep in the fridge for a couple of days. 


  • 2 cups sweet garden peas
  • 2 teaspoons International Collection Avocado Oil
  • ½ red onion
  • 8 oz feta cheese
  • 2 sprigs of fresh mint
  • 1 teaspoon ground pepper
  • Salt – to taste
