Chipotle Chicken Dense Bean Salad

Ingredients

  • ¼ cup mayonnaise
  • ¼ cup  International Collection Garlic Flavored Olive Oil
  • Juice of 1 lime + zest
  • ½ teaspoon ground cumin
  • 1 clove garlic
  • 1 chipotle pepper in adobo sauce + a little bit of the liquid
  • Salt and pepper to taste

For salad:

  • 1 ½ cups diced or shredded chicken
  • 15 ounce can of chickpeas rinsed and drained
  • 15 ounce can of great northern beans rinsed and drained
  • 1 cup corn kernels (frozen & defrosted)
  • 3 ripe avocados diced
  • 1 medium red bell pepper diced
  • 1 medium yellow bell pepper diced
  • 1 bunch of parsley, de-stemmed and finely chopped

Method

  1. Make the dressing: in a tall container, add all the ingredients for the dressing then take an immersion blender and blend until smooth.
  2. Layer the salad into four large jars. Starting first with the dressing, then chicken, chickpeas, great northern beans, corn, avocados, bell peppers, and parsley.
  3. Serve over a bed of greens when you are ready to enjoy! The jar salads should stay good for 2-3 days in the fridge.
