Method
- Make the dressing: in a tall container, add all the ingredients for the dressing then take an immersion blender and blend until smooth.
- Layer the salad into four large jars. Starting first with the dressing, then chicken, chickpeas, great northern beans, corn, avocados, bell peppers, and parsley.
- Serve over a bed of greens when you are ready to enjoy! The jar salads should stay good for 2-3 days in the fridge.
