Method
- Boil the pasta: Cook pasta according to package instructions. Drain and reserve ½ cup of pasta water.
- Prep the chicken: Season chicken with salt, pepper, Italian seasoning, and paprika.
- Sear it up: In a large skillet, heat 1 tbsp of International Collection™ Garlic Flavored Olive Oil over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and rest before slicing.
- Build the sauce: In the same skillet, add the remaining 1 tbspof International Collection™ Garlic Flavored Olive Oil. Sauté garlic for 1 minute, then stir in sun-dried tomatoes. Cook another minute.
- Make it creamy: Add chicken broth, bring to a simmer, then stir in heavy cream and Parmesan. Simmer 3–4 minutes until slightly thickened.
- Bring it together: Add sliced chicken and cooked pasta to the sauce. Stir gently to coat. Use reserved pasta water to loosen if needed.
- Final touches: Sprinkle in red pepper flakes (if desired) and garnish with chopped basil or parsley.
