Method
- Dice shallot and garlic cloves.
- Preheat Macadamia oil on medium heat, add shallot and garlic and cook until softened, stirring frequently
- Add in the tomato paste, pumpkin puree and vodka. De glaze the pan and mix everything with spatula.
- Stir in the whole milk and cook for 5-7 minutes until the sauce slightly thickens. Season with salt.
- Cook pasta according to instructions. Mix in pumpkin puree
- Serve with Pumpkin seed oil and Parmesan cheese
